Ingredients
  

  • 6 large eggs
  • ¾ cup low-fat cottage cheese
  • ¼ cup shredded mozzarella or sharp cheddar cheese optional
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • ¼ tsp smoked paprika
  • ½ cup finely chopped spinach
  • ¼ cup diced red bell pepper
  • ¼ cup finely chopped onion
  • ½ cup cooked chopped turkey bacon or chicken sausage (optional)

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a muffin tin or use a silicone one for easy release.
  • In a blender or food processor, combine eggs, cottage cheese, shredded cheese (if using), salt, pepper, garlic powder, and paprika. Blend until smooth.
  • Pour the blended mixture into a bowl and stir in spinach, red bell pepper, onion, and optional turkey bacon or sausage evenly.
  • Divide the mixture evenly into prepared muffin cups, filling each about ¾ full.
  • Bake for 20–25 minutes or until centers are firm and a toothpick comes out clean.
  • Let cool 5 minutes before serving or allow to cool completely before storing.

Notes

  • Use a silicone muffin pan for easiest release.
  • Bites keep in the fridge up to 5 days or in the freezer up to 2 months.
  • You can swap in or omit optional cheese and protein based on preference.
